Protein ball recipe – Coconut & Lime Cashew

– 6 & 1/2 cups desiccated coconut
– 4 cups cashews
– 1/4 cup almond meal
– 1 cup Raw honey
– Zest of 6 limes, Juice of 4 limes
– 2T Coconut oil
– Pinch Himalayan salt

Blend all ingredients together in food processor and roll into balls then roll in desiccated coconut. Makes approximately 35 protein balls – Refrigerate or freeze.
