Wheat Free Banana Pancakes.
2 eggs, 1 banana, 2T almond meal.
Mash banana really well with fork (or blender).
In a bowl, combine banana with eggs & almond meal & mix well.
Pan fry with coconut oil until golden.
Serve with maple syrup & fruit.
Optional – Add cinnamon which helps control blood sugar levels.
